Valentine’s Day Breakfast: Gluten-Free & Paleo

Valentine’s Day is coming up! For those of you looking to spice up your day- I’ve concocted a quick, healthy Valentines’s day breakfast that is gluten-free & paleo! This waffle recipe, paired with a fancy homemade latte is perfect for surprising your significant other- or for treating your fabulous self on the day of L.O.V.E.

Before we get into this recipe I’d like to proudly announce that the two main tools I used for this post were found at HomeGoods. Yes. HomeGoods- so they were a steal and I would highly recommend you go and search for these at your own HomeGoods before purchasing on Amazon. However- I am aware that the idea of HomeGoods does not appeal to all so I am linking both items here for you:

  1. Mini Waffle Maker
  2. AeroLatteย Milk Frother

One more note before we get into the good stuff: You do not need a waffle iron to make this recipe! Should you simply want some paleo pancakes- this recipe will work just as well. You do you.

You’ll need:IMG_2818Helpful Hint:ย Coconut Flour is found almost everywhere- check any Bob’s Redmill section at Walmart, Marianos’s etc. Toss all the ingredients in your blender.IMG_2820Blend- and set aside while your waffle iron gets up to temperature. Then start makin’ waffles! I used about 1/4 cup of batter for each mini waffle and gave them a minute before pulling them off the iron to cool.IMG_2821Once you have your waffles, plate and serve with fresh strawberries, chia seeds, cinnamon and of course- maple syrup.A515799A-DC92-49EE-A76C-A74C1E2CDB8CTime for an almond milk latte! I used Almond Breeze unsweetened vanilla and black Starbucks coffee. And of course- this gem.

Processed with VSCO with f2 presetThe milk frother is pretty self-explanatory- but give it a try beforehand by sticking the wand at the bottom of a cup filled with water and a little dish soap. You won’t waste any almond milk and you’ll get a handle on what you’re doing while cleaning it at the same time.

Valentine's Day Breakfast Waffles

These easy blender waffles will help you celebrate Valentines day in health and style!
Ingredients
  • 3 Large Eggs
  • 2 Bananas
  • 1 Tsp Vanilla Extract
  • 3½ Tbsp Coconut Flour
  • ½ Tsp Baking Soda
  • ½ Tsp Cinnamon
  • Preferred oil for greasing Waffle Maker
Instructions
  1. Place all your ingredients into the blender and blend until mixture is just smooth. Let settle while you wait for your waffle iron/pan to get to temperature.
  2. Make some waffles! If you are using a mini waffle maker you'll get around 6-8 mini waffles.
  3. Plate your waffles and top with fresh strawberries, chia seeds, maple syrup and a sprinkle of cinnamon.
